Sheet Pan Dijon Chicken

A low-effort sheet pan dinner with Dijon chicken, roasted baby potatoes, and broccoli. This dinner is designed to become a Dijon Chicken Wrap for a cold handheld work-box meal. Version: 0.3.0.

Servings and Time

  • Servings: 4, plus leftovers for 2 to 4 lunches
  • Prep time: 15 minutes
  • Cook time: 45 minutes
  • Total time: about 1 hour

Ingredients

  • 2 lb chicken breasts
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 2 tbsp jarred minced garlic
  • Juice of 1 lemon
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Sides

  • Roasted baby potatoes
  • Roasted broccoli

Instructions

Prepare

  1. Heat the oven to 425°F.
  2. Mix the Dijon mustard, olive oil, minced garlic, lemon juice, Italian seasoning, salt, and pepper.
  3. Coat the chicken with the Dijon mixture.

Roast

  1. Roast the baby potatoes for 20 minutes.
  2. Add the chicken and broccoli to the sheet pan.
  3. Roast another 20 to 25 minutes, until the chicken reaches 165°F.
  4. Rest the chicken before slicing.
  5. Reserve sliced chicken for Dijon Chicken Wraps.

  • Romaine
  • Cucumber
  • Greek yogurt
  • Dijon
  • Lemon juice

Dijon Yogurt Sauce

  • Plain Greek yogurt
  • Dijon mustard
  • Lemon juice
  • Black pepper

Before Leaving for Work

  1. Mix the sauce.
  2. Slice the leftover chicken.
  3. Assemble the wrap or pack the ingredients separately.

At Work / At 2:00 AM

Enjoy cold.

Storage and Leftovers

  • Refrigerate chicken separately from wrap vegetables.
  • Pack Dijon yogurt sauce separately if assembling later.
