Blackstone Chicken Fajitas

Chicken thighs, bell peppers, and onion cooked on the Blackstone and served in warm tortillas. This dinner is designed to become Fajita Taco Salad for a mixed warm-and-cold work-box meal. Version: 0.3.0.

Ingredients

Fajitas

  • 2 lb chicken thighs
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 yellow onion
  • Flour tortillas
  • 1 lime

Fajita Seasoning

  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • Crushed red pepper, optional

Serving Options

  • Salsa
  • Avocado or guacamole
  • Greek yogurt

Instructions

Prep

  1. Slice the chicken, bell peppers, and onion.
  2. Toss the chicken with fajita seasoning and lime juice.

Cook on the Blackstone

  1. Heat the Blackstone to medium-high.
  2. Cook the chicken until browned and cooked through.
  3. Cook the peppers and onions until tender-crisp.
  4. Warm the tortillas on the griddle.
  5. Serve with salsa, avocado or guacamole, and Greek yogurt if desired.
  6. Reserve fajita chicken and vegetables for Fajita Taco Salad.

At Work / At 2:00 AM

  1. Warm the chicken and vegetables.
  2. Build the salad over the romaine.
  3. Add salsa.
  4. Add Greek yogurt.
  5. Finish with tortilla chips just before eating.

Storage and Leftovers

  • Refrigerate fajita chicken and vegetables together.
  • Keep lettuce and tortilla chips separate until serving.
  • Avocado is best added fresh, not packed ahead.
