BBQ Chicken Stuffed Sweet Potatoes

Sweet potatoes stuffed with seasoned BBQ chicken and served with buttered corn. This dinner is designed to become a BBQ Chicken Sweet Potato Bowl for a reheated work-box meal. Version: 0.3.0.

Ingredients

  • 2 lb chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • BBQ sauce, to taste
  • 4 medium sweet potatoes
  • Frozen corn
  • Butter, salt, and pepper for corn
  • Shredded cheddar, optional
  • Green onions, optional
  • Greek yogurt, optional

Instructions

Bake the Sweet Potatoes

  1. Heat the oven to 425°F.
  2. Bake the sweet potatoes for 50 to 60 minutes, until tender.

Cook the Chicken

  1. Season the chicken with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Grill the chicken until it reaches 160 to 165°F.
  3. Rest the chicken, then dice or shred it.
  4. Toss the chicken with warmed BBQ sauce.

Serve

  1. Split the sweet potatoes and fill with BBQ chicken.
  2. Add cheddar, green onions, or Greek yogurt if desired.
  3. Heat frozen corn with butter, salt, and pepper.
  4. Reserve chicken, sweet potato, and corn for BBQ Chicken Sweet Potato Bowls.

Before Leaving for Work

  1. Dice the sweet potato.

  1. Microwave until hot.
  2. Add cheddar if using.
  3. Top with green onions.
  4. Finish with a dollop of Greek yogurt.

Storage and Leftovers

  • Refrigerate chicken, sweet potatoes, and corn together or separately.
  • Pack fresh toppings separately.
